First, I have to say that my original goal of organizing my recipes into one neat place online at this blog is not going very well. I never find the time to sit down and actually type out my recipes on the computer. My life is just like other peoples, a way too busy.
Another problem is that instead of working on the recipes from my recipe box, I keep finding new delicious recipes to try out with my family and this keeps adding to the recipe collection. Kind of one step forward and two steps back.
So here’s a great recipe I found called Arabian-style Beef with Flat Bread. It’s delicious, healthy eating from the Middle East.
Ingredients:
1 c. pine nuts
1 tbsp. olive oil
1 large onion
1 lb of lean ground beef or lamb (450 g)
1 tbsp ground cumin
1 tsp ground allspice
1 can diced tomatoes
Bunch of coriander
1 cucumber
1/2 crisp lettuce
Serve with 3/4 cup sour cream, use low fat if you wish or plain yogurt and 8 soft flour tortillas or pita breadl
Preheat oven to warm the pita bread. Dry fry pine nuts in a large frying pan. Shake and stir often til lightly brown. Set aside. Add olive oil to pan, heat it slowly. Add finely chopped onion and fry over medium heat until transparent which takes about 3 minutes. Add meat and brown. Stir in spices. Add tomatoes and their juice and simmer for 10 – 15 minutes. Stir occasionally.
Meanwhile, rinse, dry and chop enough coriander to give 4 tbsp. Set aside. Chop cucumber (dice it). Place each in a separate bowl.
Place bread in the oven to warm.
When the meat is cooked, add pine nuts and stir in coriander. Heat. Serve meat over the pita on a plate for one serving. Serve immediately.
